In the last 15 years, I have had to support MS SQL databases from a variety of sources, and I still get support requests lately dating back to 2005. Wow, even my oldest systems dating back to 1998 are still running in production serving over 1 million users per month, and 10 million per year. Amazing how strong and long SQL can survive.
Lately, though, running multiple versions has been a challenge, so I just use Oracle Virtual Box and spin up unique operating systems to support those different SQL versions.
It's not too hard. You just have to keep your versions and operating systems labeled properly, and enough extra disk space for the size of your databases. Usually 100GB on the side per OS and SQL instance is more than enough, yet for some larger sets, 1-2TB is required. As far as the number of CPU cores and RAM, I set aside 8GB and 8 core on either of my 16 CPU core 32 thread 128GB 16TB systems.
That's more than enough horsepower to do what I need to do.
